The combination of the moist, tender cake with juicy blueberries creates a heavenly bite that is hard to forget.

Why Blueberries?

Nutritional Benefits

Blueberries are known for their health benefits, including boosting brain function, reducing the risk of heart disease, and providing anti-inflammatory properties.

Flavor

The natural sweetness and slight tartness of blueberries complement the buttery and sugary base of cupcakes perfectly.

Aesthetic Appeal

The deep blue and purple hues of blueberries add a visually pleasing element to your cupcakes, making them as attractive as they are tasty.

Ingredients

For the cupcakes:

  1. 1 and 1/2 cups all-purpose flour

  2. 1 and 1/2 teaspoons baking powder

  3. 1/4 teaspoon salt

  4. 1/2 cup unsalted butter, softened

  5. 3/4 cup granulated sugar

  6. 2 large eggs

  7. 1 teaspoon vanilla extract

  8. 1/2 cup milk

  9. 1 and 1/2 cups fresh or frozen blueberries

For the frosting

  1. 1/2 cup unsalted butter, softened

  2. 2 cups powdered sugar

  3. 1 teaspoon vanilla extract

  4. 2-3 tablespoons heavy cream

  5. 1/2 cup fresh blueberries (for garnish)

Instructions

Preheat and Prep

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt.

Cream Butter and Sugar

In a large bowl, use an electric mixer to beat the butter and sugar until light and fluffy.

Add Eggs and Vanilla

Beat in the eggs one at a time, then add the vanilla extract.

Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients.

Fold in Blueberries

Gently fold in the blueberries until evenly distributed.

Bake

Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Prepare Frosting

While the cupcakes are cooling, make the frosting. Beat the butter until creamy, then gradually add the powdered sugar. Add the vanilla extract and enough heavy cream to reach your desired consistency.

Frost and Decorate

Once the cupcakes are cool, frost them generously. Garnish with fresh blueberries for a beautiful finish.

Tips for Perfect Blueberry Cupcakes

Fresh vs. Frozen Blueberries

Both work well, but if you use frozen blueberries, do not thaw them before adding to the batter to prevent excess moisture.

Prevent Sinking Berries

Toss blueberries in a tablespoon of flour before folding them into the batter.

Even Baking

Use a cookie scoop to evenly divide the batter among the cupcake liners.
